Eat Cake

Written by Annie Byrne of Aislinn Events

One never knows where they will get blogging inspiration from. Today I would love a nice, moist piece of cake – so today you get cake.

I am also going to apologize for going outside of Ireland for the source and photos of the wedding cakes today because we do have great bakers, yummy cakes and artists here but Nikki MacRae at Nikki’s Cakes in North Carolina is a MacRae and I am too {or was before I got married} so she’s practically family. Also because when I saw her website I noticed the MENU tab which I had never seen before on a wedding cake website. It was such a simple thing but totally drew me in.

Maybe it’s just good marketing but her website didn’t just say ‘flavours’  and show pictures of her {really fabulous looking} cakes, but  she gave me a menu to choose from, to create my cake, to make me hungry and to want a piece of cake. I loved that. Of course everyone loves beautiful wedding cakes but I absolutely believe that they have to taste good too. It should be the best tasting cake of your life as well as being pretty shouldn’t it?

Here is her menu:

Cakes:

Vanilla pound cake, Sour cream pound cake, Lucious lemon pound cake, Moist coconut pound cake, Caramel cake, Carrot cake, Chocolate fudge cake, Chocolate Bourbon cake, Key lime cake, Sticky toffee pudding cake, Moist yellow cake, Chocolate mint cake, Chocolate mocha, Almond cake.

Icings:

The finest imported Swiss rolled fondant in ivory or chocolate, Sweet vanilla buttercream, Buttery Swiss meringue buttercream, Lemon buttercream, Coconut buttercream, Almond buttercream, Rich chocolate buttercream, Fresh fruit buttercream, Cream cheese icing, Dark/white chocolate ganache

Fillings:

Whipped dark or white chocolate ganache, Fruit fillings or mousses

Now I’m not saying that Nikki is the only one who does this, I’m just using her as an example of what I ran across and what I thought. If you have a menu for your wedding cakes please let me know!! – And you can send me on a sample too!

Here is what some of the wedding cakes look like:
