Butternut Squash & Red Pepper Soup - Zero pts in weight watchers

Don't knock it until you have tried it

1 x Butternut Squash

1 x Red Pepper

1 x Onion

Peel the butternut squash and the red pepper, deseed and chop up into smaller pieces.  Chop onion.  Make approx 1.2 litres of vegetable stock and simmer for approx 25-30mins.  Once it has cooled blend with a hand held blender
